Poured into a snifter, Rochefort 8's big off-white, bordering on tan head floats atop a cloudy reddish-brown body. Very complex aroma sends up hints of raisins, vanilla, maple syrup, banana, and rum-like alcohol fumes. Flavors somewhat mirror the aroma, but pear and brown sugar are also present, as well as pumpernickel-like dark bread and a lingering spiciness. Rochefort 8 is a highly carbonated beer and bubbles loiter on the tongue (perhaps emphasizing the spiciness); the aftertaste is balanced though, not tending toward cloying or bitter. Pretty widely available thanks to the explosion of Belgian brewing, this is one of the pinnacles of the style. The OMG snifter used to enjoy this beer shattered mysteriously a day or two later.
