Fascinating Read on India Pale Ales and hot maturation of the beer

Martyn Cornell, genius behind the beer blog Zythophile, talks about the process India Pale Ales went through on their journey from England to India. Not only is this journey the source of their moniker, it also seems to have changed the beer immensely, in a process similar to that which more quickly matures wines like those of Madeira.

Last summer, OMG Beer! accidentally matured our Bitter Sun IPA in a hot office for 4 months. Perhaps we should have done that again this year.
